Gramma's Southern Pimento Cheese Recipe ~

Southern Pimento Cheese

Ingredients

  • 8-ounce package cream cheese

  • 8 ounces sharp cheddar cheese, shredded

  • 8 ounces mild cheddar cheese, shredded

  • ¼ cup pimentos

  • pinch of salt and pepper

  • 2-3 tablespoons mayonnaise (optional)

 

Instructions

  1. Cream together cheeses.

  2. Stir in pimentos and salt and pepper.

  3. If you prefer your pimento cheese to be a bit thinner for spreading, add in optional mayonnaise to preference.

Gramma Options

 
  • This Gramma  omits the CREAM CHEESE
  • Cheeses:  Mix the different cheeses or use two of the same CHEDDARS
  • I ALWAYS use an entire  [medium] jar of chopped pimentos
  • A Pinch of salt is fine; TASTE TEST to determine if  it seems to need ANOTHER PINCH
  • BLACK PEPPER - by all means please tell me you use COARSE BLACK PEPPER- to showcase but not to be the star~
 
  • LASTLY:  Please invite GARLIC to the party adding a DISCREET DASH.
 
REALLY LASTLY:  I prefer Real Mayonaise but Miracle Whip works too-  careful not to add too much just enough to give it a creamy texture/taste but if you really notice the mayonnaise/miracle whip....it's  too much. [You can always add more but you cannot take it out once it's mixed in.




 
 
One really, really last note: 
 Locally [the Troy, Alabama area] 
 There are two restaurants who make pimento cheese I will
order and recommend.

I occasionally
Stop by Byrd Drug Store
and grab a Pimento Cheese Sandwich to go-
In a brown bag w chips and enjoy it across the street
